Like many, I am a lover of sandwiches. That being said, I am NOT a lover of meat, on or off the bread. Here is a great alternative for those lacking vegetarian (or vegan) sandwich ideas that give them a dose of protein.
- Spread Baba Ganoush on two toasted (or not) pieces of whole grain bread;
Conveniently, this spread contains protein, as it is made of chick peas, so it also replaces the meat in the sandwich.
- Add any veggies you like. I opt for lettuce, carrots, onions, and pickles. If you feel like it, baby spinach, radishes, celery, cucumbers or any other vegetable would be great on this.
- Add pepper over your veg mountain, and squish it all together and enjoy!
This would also taste great as a wrap, or even with a bit of cheese for those who eat it (I confirm that it tastes amazing with cheese). If you don't like Baba Ganoush, or are scared to try it (don't be, the eggplant is not at all the dominant taste in it), hummus is also great in this sandwich.
